George McRae's 1912 Edwardian Baroque sandstone building spent most of its life housing NSW's Department of Education before Make Architects and BAR Studio transformed it into Capella Sydney, which opened in 2023 as one of the most considered heritage conversions Australia has produced. The warm honey-coloured sandstone facade — arched windows, ornamental cornicing, a confident civic presence on the corner near Circular Quay — gives nothing away about the four-storey contemporary rooftop extension above it, clad in fluted anodised metal fins that catch the light without competing with what McRae built. Inside, BAR Studio navigated the tension between preservation and contemporary hospitality with real intelligence. The reinstated central courtyard anchors the building's public life, while the 192 rooms and suites split between two distinct registers: heritage rooms in the original structure carry arched fanlight windows, black-framed joinery, and a palette of warm linen and dark timber that lets McRae's bones breathe; tower rooms in the extension open onto full-height glazing with Sydney's civic skyline laid out below. The bar strikes a different mood entirely — harlequin marble floors, brass-trimmed counters, and suspended feather-and-glass chandeliers bring a nocturnal theatricality that sits closer to a Mayfair members club than a hotel lobby. The spa pool, set beneath restored coffered ceilings and original arched colonnades, feels like a Roman bath that simply waited a century for the right brief.

Reawakening as Capella Sydney in March 2023, the heritage-listed icon will welcome guests inside its walls for the very first time, setting a global benchmark for luxury accommodation, cuisine and cultural immersion. Embedding visitors in the beating heart of the city’s commercial, cultural and hospitality precinct, Capella Sydney also marks the first property under the Capella Hotels and Resorts constellation to open in Australia. Balancing storied architectural features with a contemporary design aesthetic, Capella Sydney celebrates the Australian panorama through its interiors, location and experiences. Spanning eight levels, the 192 guestrooms and suites are anchored by three ground-level food and beverage outlets, with spaces throughout the hotel unfurling to reveal commissioned and collected artworks, sophisticated furnishings and intriguing objet d’art – all within footsteps of the glistening harbour foreshore, the famed Sydney Opera House and Harbour Bridge. Occupying an entire city block, encircled by Loftus, Bridge and Young Streets, the building was originally designed by architect George McRae in the Edwardian Baroque style. It first opened for government use in 1915. More than 100 years later, the meticulous restoration sees the building ready to write a new chapter in its history.

"From the moment of arrival to departure, a flawless experience. The valet had the baggage delivered, removed and stored for me in the blink of an eye. Front desk and waiting staff were exceptionally polite, polished and accommodating. The housekeepers were top notch, polite and friendly. Rooms spotless with all the creature comforts. It was very relaxing. I enjoyed the heritage feel of the building with the benefit of modern and elegant rooms. I stayed several nights at the beginning and end of my Australia itinerary. Missed the soaker tub on my second stay. The pool is glorious. The only thing I struggled with was the menu at Aperture. The food was excellent but somehow the day I was there, I wanted something simpler. Breakfast was a highlight and the coffee was always good. I look forward to my next trip to Sydney."

"Wanted to organise a special day for my Mum for mother's day. It was a truly beautiful experience sitting under the kinetic flowers in the Aperture. Mum was so chuffed and had the loveliest time. The service was impeccable and the food was truly beautiful. Mum is now 85, and every mother's day counts. Thanks Capella for making this one so memorable."

"Amazing hotel. It is a five star experience, which means it's not cheap. But every detail is taken care of, from the flowering ceiling art in the bar to the well appointed rooms to the excellent breakfasts. We were upgraded to a one bedroom suite on a high floor. The room was large, very stylish and comfortable. The closets and the bathroom were very large and the toilet featured a Toto washlet. The bed was very comfortable. We can't say enough about the incredible service. Halfway through our stay, the washlet stopped working. The hotel staff were on it quickly and when it couldn't be fixed, they immediately moved us to another room, helping us any way they could to make the move effortless. The staff at the restaurants were friendly and helpful (Sanjeev, at breakfast, made sure we had whatever we needed and was a great source of information for local, Nepalese restaurants). The only quibble - our room(s) looked across at an office building and we could clearly see what was going on in the offices. The question then is, can they see what we're doing in the room? Unclear, but be forewarned."

"What an absolutely gorgeous hotel with amazing professional staff. I felt cared for and truly enjoyed my stay. The breakfast buffet was excellent. The pastries are made fresh! the bed was probably the most comfortable bed I’ve ever had. Water pressure was great. The room was just overall comfortable."
