Built in 1888 to store wool bales arriving from pastoral New South Wales, the sandstock brick warehouse on Pyrmont's western edge carried the weight of colonial commerce for nearly a century before Ovolo Hotels transformed it into Hotel Woolstore 1888 Sydney. The conversion preserved what mattered most — the arched openings punctuating the facade, the rough-hewn timber roof trusses, the exposed brick walls still bearing traces of old signage and whitewash — then set against all of that patina an interior language drawn from pop art and mid-century modernism. The tension is deliberate and largely successful: rooms in the original warehouse retain their stripped masonry walls and tall sash windows, furnished with mustard yellow wingback chairs, boldly graphic wall murals in the manner of Roy Lichtenstein, and circular rugs in cobalt and chrome yellow that anchor the space against the rawness of the brickwork. The restaurant, visible through the ground-floor arches, plays the contrast more subtly — polished concrete floors, marble-topped tables, tufted lounge chairs in pale grey, and Thonet-style bentwood cane seating gathered beneath those original timber rafters, the whole room lit by oversized drum pendants that give it the warmth of a well-loved brasserie rather than a hotel dining room. Rooms in the newer wing exchange worn brick for floor-to-ceiling glazing and the same pop-inflected palette, the harbour glimpsed beyond. Across 90 rooms and six floors, the property holds its two registers — industrial heritage and graphic contemporary colour — in productive conversation.

"Nice location. Rooms are OK. However, I can’t see how this is really a 5 star hotel, or why Accor are affiliated with it. Rude staff, especially in the bar, where I was lectured about the cost of drinks, by a scruffy individual wearing an overcoat and a pair of Bose style headphones. Truly bizzare. Initially, the bar staff simply said that they were closed, despite several people sitting in the bar drinking. This was at 2pm! Reception staff disinterested when I arrived, and left me waiting with no acknowledgment while she fi ish Ed a chat in the phone. We definitely will not stay here again."

"The hotel (once we found it!) was lovely. The rooms were an ok size, clean and tidy. We heard no noise during our stay so assume the rooms are really well insulated! Although it would be nice to be able to open a window. The bed was very comfy and the rooms were cleaned every day, with the option to change your towels. Staff were all very friendly (there's always someone on reception to help). Breakfast was very nice, although was a little bit on the small side! The location is also great, it's a bit of a walk to the centre or to circular quay, but it's easily accessible and there's transport options nearby."

"We stayed at Woolstore 1888 during our Australia trip and, while the staff were warm and friendly, the overall experience unfortunately did not feel like a 5-star stay. We had to request for many basic amenities — cotton buds, tissues, even bedroom slippers — as they weren’t refilled or provided. The water pressure in the room was very weak, and we even noticed cobwebs, which was quite disappointing for a hotel that markets itself as five stars. The location was also further from key areas than expected, making it less convenient. While the team members were polite and helpful, the overall standard just didn’t match the rating, and I don’t think we would return."

"This hotel was very convenient for our stay in Sydney, it is about a ten minute walk to Darling Harbour which was really lovely. There are lots of other hotels in that area so perhaps look around before booking if you want to be directly on the harbour. Our room was very tiny, the bed took up most of the room but the bed was clean. That said the rest of the room was awful, and could have done with a good clean and dust: for example, there were old drink stains on the bedside cabinets. Fortunately we were only booked in for two nights, perhaps that was why we were given such an awful room. The food we had for breakfast, which was included, was very good and couldn't be faulted. The staff in the dining room and on reception were very good and always very polite and smiley. It was just a shame about the cleanliness of the room."
