Curved floor-to-ceiling glazing wraps the elliptical tower that houses The Darling at The Star in Pyrmont, its reflective skin catching both harbour light and the Sydney skyline in a facade that signals ambition from every angle. Designed by Bates Smart and completed in 2011 as the premium hotel component of The Star casino complex, the ten-storey, 171-room property was conceived as a counterpoint to the broader entertainment precinct — a place where the design register would shift decisively toward restraint and material sophistication. The outdoor pool deck, set against that curved glass wall, distils the building's character neatly: pale stone surrounds, teak loungers, and a deep cobalt-tiled lap pool that holds its own against the architecture behind it. Inside, the interiors move between moods with considerable range. Guest rooms carry a palette of warm walnut joinery, leopard-print carpeting, and silver-on-charcoal botanical wallcoverings that give the suites a considered, jewel-box atmosphere, while harbour-facing rooms frame Blackwattle Bay through full-height windows that make the water feel structural rather than merely scenic. The dining spaces are the most theatrically resolved — the glass-wrapped steakhouse running along the ground floor with concrete columns, gold lattice screening, and stone-inlaid flooring, and elsewhere a dramatically ceilinged room where hundreds of dark braided ropes cascade from above, an installation that transforms an already dark interior into something closer to immersive art than conventional restaurant design.

"Our room was absolutely stunning — a beautifully designed space with a gorgeous view. We loved the thoughtful layout, especially the separate bathroom areas, the walk-in robe, the dedicated lounge and dining space, and the full bench with a kitchen sink. Although we had only booked a standard king room, it felt far more luxurious than expected. The large spa bath was an unexpected highlight, and the shampoo, conditioner, and shower gel were exceptional quality. I think I’ve found my new favourite brand. It was a genuine surprise to see such a high-end range of amenities provided. Also, the huge bath towels were a luxurious inclusion. Another welcome detail was the room’s location. Being set well away from the lift meant the hallway stayed quiet throughout our stay. The bed was incredibly comfortable, and the automatic block out curtains worked perfectly. Every staff member we encountered was outstanding — friendly, helpful, informative, and genuinely welcoming. While some might say that’s simply part of the job, it’s not always something we’ve consistently experienced at check in elsewhere. We received a text letting us know our room was ready well before the official check in time, which was especially appreciated as my husband had only been discharged from hospital the day before and the drive to Sydney had exhausted him. We hadn’t mentioned this to the hotel, yet they still made the room available early, and that small gesture made a big difference to us both. When we arrived, staff greeted us warmly, unloaded our luggage, and stored it while we went out for lunch. By the time we checked in, everything had already been delivered to our room, and our loose items — including coats — had been neatly hung up for us. After this experience, we’ll be choosing this property over The Star from now on. The inclusions are superior, the rooms are far more impressive, and the staff are exceptionally friendly and accommodating."

"The room was amazing and the view was incredible. Couldn’t recommend the darling anymore. From the moment you get greeted at the door to the reception is unmatched. Even greeted my 5 year old which she loved being acknowledged most hotels don’t acknowledge kids. Would highly recommend. The room was very clean, bed and pillows were incredible. The day and night view were also great! Will definitely be back."
