PB hotel design editorial

Few buildings in London carry the weight of this one. Eero Saarinen's 1960 American Embassy at 30 Grosvenor Square was a declaration — Portland stone, a signature diagrid façade, and a gilded eagle presiding over Mayfair with the calm authority of a superpower at its peak. When the Americans departed and the building achieved Grade II listing, the question of what came next was never going to be simple. The answer, arriving in 2025, is The Chancery Rosewood: 144 suites carved from Saarinen's shell by David Chipperfield Architects and ReardonSmith, with interiors by the Paris-based Joseph Dirand, a designer whose gift lies in making restraint feel like warmth rather than absence. Dirand works the tension between the building's monumental bones and something more human in scale. The guestrooms layer dark walnut panelling against coffered ceilings that echo Saarinen's structural geometry, while curved boucle sofas and Verner Panton-adjacent pendant lights in aged brass pull the rooms toward a softer, more continental midcentury sensibility. The restaurant moves in a different register entirely — sweeping green banquettes, rattan screens, and cascading brass globe pendants give it the atmosphere of a grand Parisian brasserie transposed to W1. Below ground, the spa pool sits beneath an amber-lit coved ceiling, its mosaic floor shimmering in a space that feels genuinely insulated from the city above. The preserved eagle still watches from outside. Inside, everything has changed.

"Had the new spring menu afternoon tea. Lots of beautiful light sandwiches and delicious perfectly sized warm scones with amazing homemade jams (both strawberry and rhubarb). Coffees, hot matcha and teas were exceptional. Service was faultless. Highly recommend."

"We went to Chancery Hotel for some tea & dessert I was hoping for masala chai or karak chai but as they didnt have them, I ordered Arab chai. Unfortunately the tea was very watery with a hint of spice & dates. For the prices they charge, I expected better. When I gave some feedback to the waitress, instead of a simple apology, that it wasn't to my taste or suggesting something else, she was very defensive saying they have over 120 teas to choose from and the Arabs love it! I said I had tasted much better in Dubai. She said we are not in Dubai and we have a lot of European customers. None of this addressed the actual issue - the quality of tea or my experience as a guest. I was put out that not only was the tea dreadful but they weren't prepared to take on an honest review or offer me an alternative. A simlpe acknowledgement, such as, I'm sorry you didnt enjoy it, would have gone a long way. The setting was lovely, but the service response detracted significantly from the experience. Instead I left feeling dismissed for giving honest feedback For £11 plus service charge, I was served dishwash water with attitude for afters. Incidently they only had 2 desserts to choose from, which is a poor choice for a large hotel like this. I left, an angry & dissatisfied customer. Stay away from their cafe/bar!"

"It’s finally Lunar New Year, and what better to celebrate than having another staycation! This time, I stayed at Rosewood’s newest property in London: The Chancery Rosewood. The property was previously US Embassy, and it took eight years for renovation to complete. If you are a fan of luxury hotels, you would probably know that there are many prestigious five star hotels within the area of Grosvenor Square and Hyde Park, and Chancery Rosewood’s interior designer obviously know their assignment. For example, according to their staff, the floor plan of the hotel has been altered as it was originally U-shaped. It has not been modified and rooms were located around the atrium and you can now look straight through the floors. This prevents the hallways from feeling like a winding maze and allows the restaurant downstairs to have high ceilings, significantly improving the dining experience. As for the room, I am fortunate to have a free upgrade to this beautiful suite. The staff explained to me that their design didn’t adopt a tech-heavy approach but getting rid of tablets. Instead physical switch was installed to control the room from curtains to lightings. This reminded me of my stay at the elegant-yet-modern Andaz Tokyo in 2022. Drinks in the mini bar are all inclusive, though the TV only has Chromecast instead of smart tv settings. Overall, the room feels cozy despite the fact that it doesn’t have clear delineation of living and sleeping areas. The materials used and lighting create an ambience similar to home. The only slight downside was the current view from the room, as construction work at Grosvenor Square was at full throttle. The bathroom reminded me of the renovated Island Shangri-La in Hong Kong—and I mean that in a good way. The black marble paired with bronze faucets and soft lighting creates a look that is classic without being dated. While not massive, it’s well-laid-out with separate shower and bathtub. The toiletries like shampoo and hand cream are of high standard For dining, I went to a restaurant called Jacqueline for afternoon tea. This place is famous for having over 500 types of tea with specialists to do mix-and-match pairings. It sounds like a gimmick, but you can feel their dedication and finesse when watching them brew the tea leaves. The "Welcoming Tea" was Oolong series. Whether it was the cold sparkling tea or the hot Oolong, they were a bit different from what you usually get elsewhere—It is lighter than a traditional oolong but maintained its signature black tea taste, which made it very refreshing. The staff then suggested Matcha. This matcha has Genmai flavors, and as a result, it is good at quenching thirst and good for stomach. The only surprise was their Earl Grey, which, actually I should say, a bit bland because the citrus wasn't very strong and felt less of a standout. The selection of sandwiches were almost identical with what I had at The Peninsula London last year: Coronation Chicken, Cucumber, Truffle and Egg, and Salmon. Surprisingly, the flavors here were more tasty—the salmon was better smoked, the Masala in the chicken was more vibrant, and the truffle egg was richer without being overpowering. Both plain and raison scones were served for this tea set, They were small but warm with a nice milky flavor and slightly bouncy texture. It is also not too heavy in butter. The clotted cream had a slight "cheesy" vibe that paired well with the taste of the scones. As for the strawberry jam and the marmalade, the latter won hands down, as it had a rich orange aroma and a perfect balance of bitter zest and sugar. Overall, at £97, it was absolutely worth it given the service and food quality. For dinner, I have chosen Serra. This Buttermilk Pita and coal-cooked Aubergine dip is a match in heaven! The pita was chewy yet soft and perfectly charred and dipping it into the aubergine mash was delicious! For main dish, I have ordered Seared Tuna Steak. It was seared crispy on the outside while remaining tender and silky inside. The caper and olive purée underneath added layers of flavor that locked in the tuna’s freshness perfectly. For side dishes, I had this black cabbage, it was sautéed with chili, garlic, and olive oil, which makes it refreshing and well-balanced. And finally for dessert, I had this Almond Polenta Lemon Cake. With mascarpone and bergamot. you can feel the creamy texture of dairy blends in really well with the citrus fragrance. Overall, at £102. I would say it has excellent value both in terms of food quality and service. Mind you, I have not tried their famous Japanese restaurant, Tobi Masa, as Omakase element is included even for a la carte, and average cost per person is £260, so I skipped it. I also skipped the Eagle Bar on the 7th floor as I don't drink On the next day, I went to Serra again for a Full English Breakfast. As you can see from this clip , all the ingredients like sausage, bacon, black pudding, poached eggs and toast are amazing. Staff are also friendly and attentive. For fitness facilities, all guests can have access to the gym and pool via a dedicated lift at hotel floors. The gym operates 24/7, while it does not have a Smith Machine which is my favorite,it’s spacious and fully equipped with strength machines, dumbbells, and treadmills. For the pool, it’s a 25m heated pool and opens at 7:30 AM. It wasn't crowded and is clean and well maintained. The staff were also attentive but not intrusive. Overall, at £1,200 per night, when compared to other top-tier London hotels like the Shangri-La, Bulgari, or Mandarin Oriental, this is easily the best in terms of freshness, location, design, and service. The staff really know how to communicate warmly without being intrusive. But what made it stand out were two things. First, free round-trip airport transfers are included, and second, there is no standard check-in/check-out times. Technically speaking (which was confirmed by the staff), you could check in at 8:00 AM and leave at 11:59 PM the next day and that’s essentially "buy one night, get one free." Of course, I wasn’t that greedy, and hence I only chose to arrive at 11:30 AM and left at 3:00 PM, but if you have an early flight in and a late flight out, just saving the hassle of transportation and luggage makes the room rate worth every penny."

"What a hotel! Having stayed in many 5 star hotels in London this one is definitely up there with the best! From the minute we arrived we were made to feel like VIP’s. The staff are extremely friendly, helpful & offer amazing attentive service. The suites are beautifully appointed with all the tech you need. We were upgraded to a Grosvenor suite (suite number 5422) with a lovely view across the skyline of London and when the refurbishment of the gardens opposite are finished in the summer it will be stunning! The spa is a very relaxing space & I challenge you not to fall asleep on the loungers by the pool. The art collection on the walls by British artists are also very special. Sera & Jacqueline restaurants are lovely places to dine. Room service breakfast was a lovely treat too. We were attending an event in the ballroom & what a glamorous space that is. This hotel will not disappoint & we will definitely stay again even though we live in London!"
