PB hotel design editorial

A Haussmann-era limestone facade on one of Rennes' most historically charged streets, steps from the Parliament of Brittany, provides Balthazar Hotel & Spa with a grounding that most purpose-built boutique hotels spend fortunes trying to manufacture. The building's classical bones — arched windows at the piano nobile, wrought-iron balconies, a stone base giving way to rendered upper floors — have been retained with precision, the street presence updated only through black-framed glazing at ground level and the restrained banner signage visible in the facade image. The MGallery collection property delivers 55 rooms across four floors, with the interiors calibrated to sit comfortably between the building's nineteenth-century formality and a recognizably contemporary French sensibility. Inside, the guest rooms carry boiserie-panelled walls painted out in pale grey-white, dark upholstered headboards, and pendants with a quietly Scandinavian profile — the effect closer to a considered private apartment than a hotel room. Blush linen throws and woven rope terrace furniture appear in the upper-floor suites, which open onto planted outdoor decks. The courtyard garden, framed by a full-height steel-and-glass wall, uses moss ground cover and tall cylindrical glass torchères to give the outdoor dining space an atmosphere quite distinct from the interior register — more organic, lit warmly against Rennes' Atlantic dusk. The restaurant runs to deep green velvet seating, oak flooring, and directional task lighting, a dining room that treats the hotel guest and the Rennais equally seriously.

"Wow! Wow! Wow! What an incredible find! We discovered this rare gem of a hotel through the Accor Group app, which we always use whenever possible, and it exceeded every expectation. After spending the day cycling in the pouring rain, we arrived soaked and exhausted, but from the moment we walked through the door we were treated like royalty. The reception team couldn't have been more welcoming. They took care of storing our bikes, checked us in efficiently, and even arranged our dinner reservation and spa booking. As we were shown around, the bar staff also greeted us warmly, making us feel genuinely valued from the very start. Our room was beautiful, spotlessly clean, and equipped with everything we needed. The bed was exceptionally comfortable, ensuring a wonderful night's sleep after a long day in the saddle. To celebrate our wedding anniversary month, we decided to treat ourselves to the Menu Découverte tasting menu (€52) with the three-drink pairing (an additional €42), and it was one of the highlights of our stay. The aperitifs were outstanding, with a fantastic cocktail selection, and the amuse-bouches were exquisite, perfectly preparing our palates for the courses to come. Each wine was expertly paired and enhanced every dish. The menu consisted of: Seasoned tomato, burrata and fig leaf oil. Chicken cooked on the bone with pistachio purée and kaffir lime jus. A selection of cheeses from Maison Gauthier (supplement of €10). Apricot and almond with crisp meringue. Every course was beautifully presented and full of flavour. We both chose to add the cheese course, which was excellent, but the standout for us was the dessert, especially when paired with the superb cocktail. It was a memorable dining experience from start to finish and the perfect way to celebrate our anniversary. The spa was another highlight. The booking system worked brilliantly, ensuring it never felt crowded, making for a wonderfully relaxing experience. Every member of staff we encountered was warm, professional, and genuinely passionate about providing excellent service. It's rare to find a hotel that gets absolutely everything right, but this one certainly did. We left feeling relaxed, thoroughly spoiled, and already looking forward to returning. Highly recommended."

"A beautiful boutique hotel conveniently located in the centre of Rennes. Very clean and comfortable room, with an added bonus of 1 hour spa access per day. Nice common areas including an outdoor patio with tables and chairs. The only negative is the breakfast room, which had too many big flies on the buffet food."
