Carved into the granite hillside above Ornos Bay in a series of cascading white terraces, the property that became Once in Mykonos takes its architectural cues directly from the Cycladic vernacular — dry-stone retaining walls in local schist anchoring each level to the slope, whitewashed volumes stepping down toward the water in a rhythm that mirrors the island's traditional settlements without imitating them literally. The massing, visible in aerial photographs, traces the natural contours of the rock rather than imposing a single building footprint, giving the hotel the layered quality of a small hillside village grown organically over time. Inside, the interiors work a restrained palette of warm whites, woven jute, and grasscloth-textured wall panels that keep the Aegean light central rather than competing with it. Four-poster beds in white lacquered steel anchor the guest rooms, pendant lights in sculptural paper or fabric shades adding a softness that offsets the architecture's clean geometry. Rattan and rope-woven outdoor chairs furnish the terraces, while the main pool deck — positioned to frame an unbroken view across Ornos harbour and its anchored fleet of yachts — combines an infinity edge with white steel pergolas and scattered olive trees planted directly into the stone surround. The effect is closer to a considered private compound than a conventional hotel, which is precisely the atmosphere Once in Mykonos has been built to sustain.

"Wow. Right from the moment you arrive in the car park and get transferred to the buggies this is just pure luxury. It’s on a hill but the buggies arrive within minutes. Reception is beautiful and the welcome just as friendly. (Thank you Maria). We were taken to our room which was vast and very beautiful. The shower was so big standing in the middle you couldn’t touch the sides. Lots of lovely little touches, complimentary water each day, macaroons and on my birthday a cake. The pool was perfectly adequate though somewhat bracing given it was October. The breakfasts are exceptional, with freshly squeezed orange juice, a buffet area that is changed daily and lovely freshly made omelettes. When replacing tea they came with a fresh pot, fresh milk and fresh cups. They also have a small gluten free section and are really up on allergies and dietary requirements. The main pool is lovely with the comfiest pool chairs I have ever lounged on. They come round with an ice bucket and water, fruit kebabs and the occasional liqueur during the day - all complimentary. The staff are mostly from the Philippines and are just delightful. They work the summer in Mykonos and the winter in Athens. Shout out to Kostas the lifeguard who is an Olympic swimmer should you ever get into difficulties. The views all round are stunning overlooking Ornos bay and beautiful for the sunsets. We didn’t eat in the hotel, it is very expensive, preferring the tavernas that are only 5-10 minutes walk away. This really is a beautiful hotel - adults only - with stunning visas and super efficient staff."

"The hotel was absolutely beautiful and the views, I could never get tired of them! From the time you step onto the property, the staff were amazing. A surprise that definitely came in handy was the golf cart rides around the property. I love that I could call the front desk arrange for a transportation and a staff would pick us up with the golf cart and take us to the parking lot where a car would be waiting. It also gave me an opportunity to enjoy the views as we rode down the hill. Upon entering the room, a bottle of champagne with a hand written note and macrons awaited us! The breakfast was very good and had a variety with eggs made to order. We did order room service once, and it was really good as well. Unfortunately we didn’t do dinner on the property. We decided to get a room with a private pool and we really enjoyed it. You could see the views from the pool as well. The service was phenomenal. Especially the staff who cleaned the rooms. Each time we returned to the room, it felt like we just checked in. Towards the end of our staff came around to deliver a sweet treat. Location wise, it was a short drive to Mykonos town and about a 15-20 minute drive to all the popular beach clubs. Near the hotel are a couple of restaurants you can walk to. Overall, I would definitely recommend staying at Once in Mykonos."

"Just had the most amazing 5 days at once in Mykonos. Roughly a ten minute journey from the airport. The taxi is quite expensive but oh well I’m on holiday. Arrived at the hotel and a little buggy was waiting to take us to reception. Reception staff checked us in and we were taken to the bar for a welcome drink. The buggy then took us to our room. We were given an amazing room 601 which one of the buggy drivers told us was the best villa at the hotel. Two king size bedrooms two bathrooms kitchen and living room and a pool area with places to sunbathe and eat. The hotel at this time of year was very quiet. Barely saw another guest. Even at breakfast. A couple of resident cats sit and hope for a snack. Breakfast was plentiful Couldn’t have wanted anything else. Fresh coffee is made at the bar and brought over. The sun didn’t go on the rooms garden until about 11am so we went to the beach for a while which is about 5 minute walk. The hotel over looks it. There are beach beds but we just took our towels and sat on the sand. There isn’t a great deal to walk to in the village. There is a good supermarket and couple of bakeries, restaurants and coffee shops. Back at the room by 11am full sun on the room. If you are brave enough a dip in your pool. I just about got my feet in. There was a lovely pool area further up which was very quiet. You could get the bus into Mykonos town for 2 euro each Very frequent and took about 15 minutes. You can’t really walk anywhere as there are no paths. A couple of the roads were quite scary to walk on. I really can’t fault this hotel. All and I mean all the staff are so lovely and polite. Rooms were spotless with everything you need in them. As the hotel was quiet we were allowed to make use of our room until we left at 6pm free of charge. Not many places will do that. When we checked out we were both given a little gift each. Would I return. Most definitely."

"A gem of a hotel, great location with the most wonderful staff, every single one couldn't do enough to make our ten day stay very memorable. Special mention to Michael and all the restaurant team, Yannis and Myrto from the management team who were everywhere making sure guests had no issues and all the reception team and buggy drivers. We enjoyed a our stay immensely, we'll return again."

"Hard to describe how amazing this place is! The location is perfect with stunning views over Ornos Beach. We enjoyed such a peaceful and relaxing stay. The staff were outstanding—always going above and beyond to help and make us feel welcome. The food was delicious, too. Michal was brilliant, and there’s a young guy with dark hair (I didn’t get his name) at the bar who was lovely as well. Oh, and the lady who makes the omelettes. Honestly, everyone who served us was fantastic — from the people at reception to those who drove the buggies, just everyone."
