PB hotel design editorial

Carved into the granite hillside above Ornos Bay in a series of cascading white terraces, the property that became Once in Mykonos takes its architectural cues directly from the Cycladic vernacular — dry-stone retaining walls in local schist anchoring each level to the slope, whitewashed volumes stepping down toward the water in a rhythm that mirrors the island's traditional settlements without imitating them literally. The massing, visible in aerial photographs, traces the natural contours of the rock rather than imposing a single building footprint, giving the hotel the layered quality of a small hillside village grown organically over time. Inside, the interiors work a restrained palette of warm whites, woven jute, and grasscloth-textured wall panels that keep the Aegean light central rather than competing with it. Four-poster beds in white lacquered steel anchor the guest rooms, pendant lights in sculptural paper or fabric shades adding a softness that offsets the architecture's clean geometry. Rattan and rope-woven outdoor chairs furnish the terraces, while the main pool deck — positioned to frame an unbroken view across Ornos harbour and its anchored fleet of yachts — combines an infinity edge with white steel pergolas and scattered olive trees planted directly into the stone surround. The effect is closer to a considered private compound than a conventional hotel, which is precisely the atmosphere Once in Mykonos has been built to sustain.

"What an outstanding boutique hotel. Nothing was too much effort. From first class service at breakfast, being looked after at the pool all day and bedroom treats and water in the afternoon. It was truly a very special experience."

"We ve been traveling to Mykonos a lot of times, but our last experience was above we expected. The view, breakfast, rooms, and people working at Once in Mykonos are something that will make us return for sure! We came with a taxi, as there was no available cars, specific one we wanted. A huge THANK YOU to Tatiana, who helped us with the best Mini Cooper in just an hour. All the best tables in clubs were also provided last minute. The best experience and stay!"

"If you are looking for a relaxing oasis then this is the hotel for you. We have just returned after a 8 day holiday - i could have stayed so much longer. Everything about this hotel is without doubt excellent. From meeting at arrival until leaving our experience was truly amazing! I have been fortunate enough to have stayed at lots of lovely hotels but for us this was more than a 10/10! The staff all work so hard to ensure that every need is met. The service is exceptional - even the General Manager Myrto greets you personally and is very hands on. Paul the bartender, Bernadette and Rodel (restaurant area) and their manager with the red hair - sorry Greek name all taking time to remember tiny details and make sure the holiday is perfect. It’s clear all of the staff simply love what they do - hence why the service is faultless. Rooms are lovely and everything is immaculate You will need to get a buggy up and down from the hotel to the beach - Thank you George - always arriving with a smile :) Apaggio the seafood restaurant - highly recommend - its by the hotel so a very short walk - suggest booking Konstantinos by beach - had the most delicious lobster - again highly recommend. Mykonos town is easier to get to than you think And for those that have not been before ( we hadn’t) there is a boat - you can hop on and off to other beaches) that’s a great thing to do So to summarise - Loved Mykonos - yes it’s pricey but in my opinion worth it ! And the hotel - highly recommend - will definitely recommend to my friends and hope to return - thank you for a relaxing week now back to reality :)"

"What a beautiful place. Our first time in Mykonos and this hotel didn’t disappoint. We were only here for 4 days and spent most of the time out at beach clubs ect but when we were in the hotel is was amazing. From when you first arrive to when you leave the staff are 10/10. From the amazing bell boys to the housekeeping they really all do provide 10/10 service. The pool area is small but the hotel was very quiet so didn’t need to be bigger, it was a nice break from the crazy parts of Mykonos for the first couple hours of the day. Breakfast was okay, not the biggest selection but all presented lovely and brilliant staff. The pool staff were great and always kept the area clean, they could perhaps go round to the sunbeds more to offer drinks instead of walking to the bar, particularly as it is quiet. Rooms were perfect for our stay as we didn’t spend much time there and the housekeeping were the best we’ve ever had and we travel all round the world. Overall a perfect stay, great location to all the main beach clubs and places round it. We loved the stay… would deffo recommend for those that are looking for a quality base if heading out a lot."

"Having spent 8 nights in Mykonos, we have come to appreciate the location of the property. It offers stunning sea views while being close to the beach. Initially we felt like we were a bit isolated from the buzz of Mykonos town but it turned out to be a huge benefit. Upon arrival we were met by Tatyana who was extremely helpful in making our stay as smooth as possible. At our whim, she made reservations at the restaurants, booked car rental, offered recommendations on the places worth visiting and those that could be skipped. We spent a week at the end of May - start of June and felt like it was absolutely the best time to visit the island with every restaurant and beach club gearing up for the season while still being rather relaxed and not crowded. At the hotel, for example, we felt truly special, as the season was just starting and occupancy rate was still low-ish. We loved our experience and cannot wait to come back."
