Positioning the Nobu brand — with its Japanese-Peruvian culinary identity and glossy metropolitan associations — against the stripped vernacular of Santorini's caldera ridge was always going to require a careful hand. Nobu Hotel Santorini, set on the clifftop at Imerovigli above the volcanic drama of the caldera, resolves that tension by letting the island's architectural grammar do most of the talking: whitewashed plaster volumes with rounded arches, cave-like vaulted ceilings, and the low horizontal massing of Cycladic tradition anchor a property that could easily have felt imported. The interiors work in a palette of raw linen, jute, and warm sand — low-platform beds dressed in white against barrel-vaulted ceilings, woven rugs in ochre and tobacco, matte black pendant fittings suspended from plastered walls. There is almost no colour beyond what the Aegean provides through the window. The restaurant is where the Nobu signature makes itself felt most forcefully: a deep timber pergola structure, with exposed beam-and-rafter joinery in warm-toned wood, frames the open caldera edge at sunset, the bar counter clad in raw stone and underlit in amber. Two infinity pools step down the hillside terrace, flanked by rope-and-teak sun loungers and mature olive trees planted into pale stone decking — a poolscape that manages the difficult balance between resort formality and the unpretentious ease that Imerovigli, quieter than Oia and far less trafficked, quietly demands.

"Unfortunatley the hotel had to close for the season and I empathized with them. For more then 165 days I have been promised a refund. I have received numerous emails about wire transfers on the way etc. No funds were ever returned even though we left a $4000 deposit on three rooms. They are liars and theives. This is an embarassment to the Nobu brand. I would NEVER reccomend this property."

"a cool hotel with luxurious and spacious rooms with minimalist details. the pool is lively with good music next to the trendy restaurant. The staff is friendly and always available to chat and give good tips. The hotel is between Fira and Oia and has very private access."

"A year ago when we began our search for Greek Islands hotels, we used a mix of Trip Advisor, Vloggers on YouTube, instagram accounts and more. We book our own travel - we do not use travel agents. We had never been to the Greek Islands and Santorini had a specific mission for us which was the Flying Dress photo shoot that was on my wife’s bucket list. We knew Santorini was very tourist driven and busy so we did not want to stay directly in Oia or Fira with all the foot traffic and noise. Nobu started to present itself more and more. I began to read more about the company and realized it’s an international luxury organization of which Robert Dinero is an owner. Given were huge fans and the company in general fits all of our values, my wife booked it. What can I say from here… pure luxury. From the moment you arrive, the staff approaches your car and greets you with a refreshing drink and welcome information. After check in they escort you to your room. This trip was celebrating our 12 wedding anniversary and also my 50th birthday. We were visiting at the end of the season so temps were down and the hotel is on its final stretch. They upgraded us to the top room as a surprise and it was heavenly. The integration of the Japanese aesthetics in the design of Nobu properties (and their restaurants) made for a tranquil experience. Our shower was cave-like and enormous. Both my wife and have been battling colds this entire 3 week trip so cuddling into this shower together at night under hot steam was a God-send. Upon entering the restaurant in the evening the staff always yelled “irasshaimase” which means welcome to our home in Japanese. Food - 5 star Service - 5 Star Property - 5 star. Tranquil and soothing all day long with relaxing vibes pipes throughout the property. The pool area with the view over the caldera is a dream bucket list item for anyone. Whether at the pool, in the bar, in your room or doing anything at all, they offer flawless personal service by not letting you lift a finger. I don’t require that, but when you pay this sort of premium, it’s the details in every step that separate the leaders from the rest. I recommend Nobu Santorini and will try their other properties around the world. Every penny was worth it."

"We have just returned from our stay at Nobu and it is a superb spot to sit back and relax even in a busy Santorini August. It’s a nicely sized hotel of around 25 rooms all set around the superb pool, giving amazing caldera views all day and leading to incredible sunset views as evening comes with a cocktail by the pool. Laid back beats from a low key DJ, not loud and disturbing, just creating a lovely vibe. The staff at Nobu are lovely and super friendly and helpful, with a special call out to Francesca who was super helpful, suggested such great spots for us and even checked in with us after we had left to see how things went, this kind of endeavour really shows the highest appreciation of customer obsession. Incredible. Lovely hotel, away from the crowds, brilliant service and people."
