Spread low across the volcanic plateau of Mesaria, away from Santorini's postcard-saturated caldera edge, the architecture of NOŪS Santorini makes a quiet argument for restraint. Divercity Architects and MPLUSM Architects shaped the 2022 project as a combination of renovation and new-build extension for Yes! Hotels, producing 121 rooms and suites whose white rendered volumes step and fold across the site in clear dialogue with Cycladic vernacular — angled rooflines creating a rippling silhouette when viewed from the pool deck that feels like an abstraction of the island's own geological strata. That centrepiece pool stretches to 1,000 square metres, its horizon dissolving into the Aegean below. Inside, the material palette does the heavy lifting. Terrazzo floors in pale aggregate anchor the rooms, warmed by substantial oak joinery — headboards, bench frames, and console tables hewn from timber with visible grain and heft, set against limewashed white walls. Bespoke mosaics surface elsewhere, their dark volcanic texture referencing the island's pumice and lava fields. Lighting by Eleftheria Deko & Associates keeps everything low and golden, while the landscape, designed by Doxiadis+, layers oleander, agave, and date palms around the pool and a sculptural installation of mosaic-clad forms that punctuate the gardens. The dining terrace, angled to face the sunset directly, distills the whole proposition: architecture and landscape working together to frame what Santorini has always been about, without shouting about it.

"Location was great - right in the centre of the island - most towns were 10-15 minutes away, with a slightly longer journey to Oia We had a balcony rooms which was a good size with a large bathroom and separate toilet. Towels were fluffy, toiletries were high quality, towels were changed as often as needed. Everything in the room was very clean. Breakfast had a huge amount of choice - the choice didn't vary much from day to day but there was lots to choose from. Lunch by the pool was very good and the cocktails in the bar were great. All the staff were friendly and helpful. Gym was good - plenty of equipment and free weights. Pool area very good with no need ever to rush for a sunbed. We would definitely stay there again."

"I stayed at Nous Santorini Hotel for 2 nights with my large family ( 3 adults and 5 kids). I booked the stay through my American Express Platinum Card which gave us the benefit of earlier check in time, complimentary daily breakfast as well as a room upgrade. I originally booked 2 Euphoria suites, however when I asked about the room upgrade, the hotel upgraded us to the Bungalow suites which have private pools as well as separate seating areas, they also provided complimentary pull away bed/s for my kids in each room. The hotel is located within a walking distance to pharmacies, supermarkets as well as local restaurants ( reception staff gave us some amazing restaurant recommendations by the hotel as well as in Oia). Oia ( make sure to go there for the unbelievable, breathtaking sunset) as well as Fira are roughly a 20 minute Uber/cab drive from the hotel. I gave the hotel 4/5 because when you get up earlier around 7 am and walk towards the main pool/breakfast area you can still see a "mess" around the main pool chairs including empty dirty drink cups, dirty towels scattered around from the previous day. I just feel that for a 5 star hotel, things like these should be cleaned up the night before so guests don't have to see this mess the next morning. Otherwise beautiful hotel and very accomodating, friendly staff!"
