Straddling a narrow peninsula where Lough Corrib meets the River Cong in County Mayo, a thirteenth-century Anglo-Norman castle expanded across seven centuries into one of Ireland's most recognizable silhouettes — battlemented towers, grey limestone walls, and formal gardens stepping down to the water's edge. Ashford Castle passed through the hands of the de Burgo family, the Brownes of Westport, and eventually the Guinness brewing dynasty before opening as a hotel in 1939, its 350-acre estate now carrying an eighteen-hole parkland golf course designed by Ryder Cup captain Christy O'Connor Jr., visible from the fairways as a romantic backdrop of crenellated turrets and wooded shore. The interiors, substantially reimagined during a two-year, $75 million renovation completed in 2015 under the direction of designer Olga Polizzi of Rocco Forte Hotels, work carefully between two registers: the masculine grandeur of the Dungeon Bar, where dark walnut Gothic cabinetry, tufted leather club chairs, and a carved limestone chimneypiece hold the atmosphere of a Victorian hunt library, and the unabashedly romantic guest rooms above. The 83 rooms and suites range from canopied four-posters draped in champagne silk with twisted mahogany columns framing lough views through arched windows, to attic suites where powder-blue Murano glass chandeliers and Venetian mirrors introduce a more playful, feminine counterpoint to the castle's stony exterior.

"Ashford Castle was the highlight of our Ireland trip! Bagpiper met our boat and led us to the castle. Our room was spacious and impeccably decorated. Afternoon tea was beautifully presented and delicious. George V Restaurant was gorgeous and delicious. Loved the concierge! Stroll around the grounds at twilight was peaceful. Chocolates on our bed for bedtime. Morning walk with the dogs was also memorable as was the breakfast buffet (with personalized hot selection) beautifully presented and delicious. Couldn't have been better. Highly recommend!"

"This was the most fabulous place my husband and I have stayed for a long time. Service is impeccable, always there to meet every need. So many different and fun activities. My husband went horseback riding, clay shooting and we both took several walking tours. The garden tour was the most interesting activity. All meals were perfect, taste and service. The perfect place for a special occasion. Highly recommend."

"If you are debating whether staying at the Ashford Castle is too pricey for you, just throw caution to the wind and go! We stayed three nights for our anniversary and it was so wonderful in so many ways. From the joyful greetings at the gate, door and lobby, to the attentive and pleasant service in every bar and restaurant, to the perfect room attendants who kept everything neat and fresh, the hotel management and staff should be praised. The view from our room was stunning, both Lough Corrib and castle sides. We just had to turn the chairs toward the window for our morning coffee and evening wine relaxation. The room was comfortable and beautiful, from the wall coverings and upholstery to the art glass chandelier and the marble bathroom. Breakfast was unparalleled. Be sure to taste their signature roast ham. So many choices, and such fresh bakery. We never needed lunch. Do not miss the morning walk with the Wolfhounds. What a delight to meet them and their handler! You can go even if it rains, as the lobby had wellies and rain coats for all. (We didn’t need them, but I was mesmerized by the look of them lined up at the door). We really enjoyed our morning horseback ride through the beautiful grounds, especially the stops for photos with Squire Danaher’s house and the castle as backdrops. Our guide was wonderful, and patient with us. We almost skipped the boat tour on Lough Corrib, but when the sun came out we opted to go. (You can just get in line and pay at the boat last minute). The views of the castle from the water are stunning, and the history of the area from the captain interesting. Dinner at Cullens at the Cottage and the George V were both delicious and the service excellent. The castle is so close to the town of Cong that it is a lovely walk for a short visit. We enjoyed a few hours there with a pint or two and a great dinner at the famous Pat Cohans. The only area where I found room for improvement was the spa. While it is a beautiful space, and the Ashford Ritual therapist and service were great, I found the process inadequate for a hotel of this caliber. Asking your guests to walk through the hotel in bathrobe and slippers instead of offering them these items for changing in the spa is awkward. It is a long walk and the shared elevators are small. The desk staff was not instructive enough about using the jets in the pool, and I had to ask for help both with turning the jets on and with getting them to turn off as they are very noisy. It was a long walk to the front desk of the spa in a wet swimsuit to get help. They do not answer the pool phone. I also asked three times if I could pay to have my husband join me in the spa for steam room and pool since it was our anniversary. He was not permitted, unless he signed up for a service, even though most of my hours there I was the only one in the facility. All in all, we would return to Ashford Castle in a heartbeat."

"Our 2 night stay was everything we dreamed it would be. The estate offered numerous activities and the castle amenities were luxurious. Truly 5 star service and food. The staff were friendly and attentive. We loved the falcon walk and morning walk with the wolfhounds."

"Our two night recent stay was perfect in every way! The customer service from every single staff member that we encountered was fabulous. Everyone was very friendly, helpful and knowledgeable. They were all genuinely happy to help us with whatever we needed, whether it be directions, reservations, a ride into the village, extra towel, bringing a chair cushion for me out in the patio (though I was quite comfortable without one 😊). There was always a staff member nearby, but never hovering. This property is absolutely beautiful and they leave no detail untouched. Our only problem was we didn’t stay longer ! Next time. 😉"
