Straddling a narrow peninsula where Lough Corrib meets the River Cong in County Mayo, a thirteenth-century Anglo-Norman castle expanded across seven centuries into one of Ireland's most recognizable silhouettes — battlemented towers, grey limestone walls, and formal gardens stepping down to the water's edge. Ashford Castle passed through the hands of the de Burgo family, the Brownes of Westport, and eventually the Guinness brewing dynasty before opening as a hotel in 1939, its 350-acre estate now carrying an eighteen-hole parkland golf course designed by Ryder Cup captain Christy O'Connor Jr., visible from the fairways as a romantic backdrop of crenellated turrets and wooded shore. The interiors, substantially reimagined during a two-year, $75 million renovation completed in 2015 under the direction of designer Olga Polizzi of Rocco Forte Hotels, work carefully between two registers: the masculine grandeur of the Dungeon Bar, where dark walnut Gothic cabinetry, tufted leather club chairs, and a carved limestone chimneypiece hold the atmosphere of a Victorian hunt library, and the unabashedly romantic guest rooms above. The 83 rooms and suites range from canopied four-posters draped in champagne silk with twisted mahogany columns framing lough views through arched windows, to attic suites where powder-blue Murano glass chandeliers and Venetian mirrors introduce a more playful, feminine counterpoint to the castle's stony exterior.

"Ashford Castle was definitely one of the highlights of our 7 weeks overseas. The castle itself is just beautiful, picturesque beyond words. The living areas are all beautifully appointed. The open fires add to an atmosphere of refined splendour.our room was delightful and spacious."

"Ireland Tourism assisted with our booking of this lovely property. We were celebrating our 24th wedding anniversary during our two night stay. ALL staff were aware of our anniversary starting with reception and on through our anniversary dinner at George V. On our second evening we enjoyed dinner at The Dungeon and had a lovely chat with the manager of the restaurant. Breakfasts were abundant and delicious. No request was too much as I learned when in search of a seamstress to help with a hem that needed mending. The team at reception whisked the dress away and it was later hanging mended in our room. The swimming pool was perfect for some laps. The grounds were lovely for strolling. We definitely plan to return."

"What a wonderful and amazing experience I had at Ashford. Not only are the grounds and the castle beautiful and thoughtfully maintained, the staff are truly exceptional. I believe they are what made the visit truly memorable. The check in staff, the gentleman concierge, the waitstaff, the archery instructor and the gentleman with the dogs were courteous, polite, well informed, friendly and funny. The accommodations were extremely comfortable and well appointed and the food and drink were some of the best I have ever had. I highly recommend for an adventure as well as relaxation in a truly beautiful location."
