Within the whitewashed centro storico of Ostuni — the so-called Città Bianca perched above the Puglian plain — a seventeenth-century palazzo that served various civic and religious functions over three centuries was transformed into Paragon 700 Boutique Hotel, taking its name from the year 700 AD, which local tradition associates with the town's founding. The conversion preserved the building's Baroque bones with careful restraint: pointed stone arches in the local pietra leccese frame what is now the restaurant, their medieval geometry filled with angular steel-and-glass inserts that make no pretence of historical mimicry. A cast-iron cauldron sits in the courtyard garden like an archaeological deposit, while teak daybeds beside the lap pool rest against an ancient rubble wall that was clearly never touched. Inside, the rooms work through controlled contrast rather than period recreation. Walls finished in rough Venetian plaster in warm taupe and grey provide the ground; against them, a dramatically winged headboard in scarlet velvet commands one room the way a Baroque altarpiece commands a nave, while another deploys an elaborately carved pale-stone surround — salvaged or faithfully reproduced — as the architectural centrepiece behind the bed. Herringbone oak floors run throughout, and pendant lighting in each room draws from a contemporary Italian craft vocabulary — clustered glass cylinders in one, woven-rattan drum shades in another. The restaurant continues the dialogue: raw vaulted masonry overhead, a vintage red Lacanche range anchoring the open kitchen, mid-century black chairs pulled to reclaimed walnut tables beneath a flamboyant red paper chandelier.

"This is a marvelous hotel. A wonderful and interesting setting with uniquely interesting and comfortable rooms; a great bar and restaurant; a perfect location in Ostuni; and most importantly a highly trained, highly qualified, and fully responsive staff that worked seamlessly together and took care of all of our requests and needs during our four-day stay."

"-Position amazing and a nice old property -Breakfast very good - we stayed in the Saphire/ Zaffiro Room for two nights - not great if your not travelling alone... the toilette is in the open room, so don't expect a "quite moment" by yourselves. Not exactly romantic.. and of course no bidet. - no coffee machine in the room and in case you would decide to take the laundry bag there will be charge of 23€. - on the second night the heating in the room didn't work. After three visits by the nice night porter Giuseppe he didn't manage to get the heating working but supplied us with a separate duvet, but couldn't find a separate heater. We stayed over the New Years period and the outside temperature was just above freezing, yes even Puglia there can be a cold snap. Staff not overly friendly, rather argumentative. Especially at the reception desk. Altogether below the expected five star experience one is paying for. Especially if your group has booked altogether six rooms, practically half the hotel."

"Great location. Beautiful, eclectic property. Superior suite was very spacious with high ceilings. Frederica and her colleague at the front desk were very accommodating. Breakfast offerings were limited, especially for a hotel in Europe of this caliber. The shower was inside of a high walled tub so it was difficult and slippery to get in and out of. The price was expensive compared to other similar hotels in Puglia."

"When I walked into the Paragon 700 I thought I walked into my new home in Italy. The staff was that friendly, welcoming and dare I say, excited to see me. Federica, Matia, Vincenzo, Ellie, as well as everyone on the wait staff at their out-of-this-world restaurant, Guisseppe, Joel, Silvia, Ostunio (sp.?), made us feel like the only guests in the building. True confession, we ate at the restaurant every chance we had, we tried a few other places and kept coming back. Every dinner option, the club sandwich (best we ever had) and cavatelli on the all-day menu, and the breakfast (even the granola) were superb. And the property. Oh. It is so unique, so painstakingly appointed and decorated, that it feels like you’re on a treasure hunt every day with something new to discover – art, books, carvings, light fixtures, artifacts, fruit trees, and yet it exudes warmth, comfort and world class hospitality. Paragon 700 has that rare alchemy of the highest of quality delivered by the warmest of human beings. There is an authenticity and charm that will stay with us far beyond our visit to beautiful Puglia and the marvelous white city, Ostuni. Thank you to everyone at Paragon 700 who made it a memorable stay."
