Conjured from scratch on 400 acres of coastal canyon land north of San Diego, the Fairmont Grand Del Mar opened in 2007 as an act of deliberate anachronism — a new-build resort designed by WATG (Wimberly Allison Tong & Goo) in the manner of a centuries-old Mediterranean estate, complete with terracotta roof tiles, salmon-washed stucco facades, arched colonnades, and a porte-cochère anchored by a white marble figurative fountain. The effect is closer to a Tuscan villa compound than a California resort hotel, the low-slung wings stepping across the landscape in a rhythm that disguises the property's 249 rooms across multiple floors behind a domestic scale. Interiors by ForrestPerkins sustain the illusion with considerable confidence: mahogany four-poster beds with carved headboards, coffered and gilded tray ceilings trimmed in plaster dentil molding, striped silk drapery in navy and gold, and upholstered settees arranged to evoke a well-appointed private house rather than a chain property. The outdoor dining terrace, shaded by wrought-iron pergolas with scrollwork canopies and furnished with cast-stone pedestal tables, gives onto a balustraded staircase flanked by Italian cypresses — an arrangement that feels genuinely Italianate rather than merely themed. At the pool, red-and-white striped market umbrellas and ranks of teak loungers frame the water against a backdrop of mature Canary Island palms, the whole composition settling into the canyon light with an ease that the building's invented history almost earns.

"The staff was absolutely so incredible and accommodating, specifically Steven the concierge and Danielle who works the front desk. They were so helpful with room drops and made sure that all my clients staying at the hotel received their room drops. All the way from New York I felt as if I was staying at the hotel with live updates and confirmation of delivery! Thank you!"

"Just stayed here for 8 days with my family and we were thoroughly impressed. The hotel itself is beautiful (the grounds, the ballroom, the terraces, the library, the bar, the guest rooms). Rooms are a bit of a walking distance to the main areas and could use some updating of the heavy wooden cabinets in the bathroom, but these are minor points. The property manages to feel both expansive and intimate. Property is beautifully maintained. Fitness center is bright, clean, and well-equipped. Plenty of umbrellas at the pools. Beautiful pickle ball courts and golf course. What truly elevated the experience, however, is the excellent customer service. All staff members were extremely professional and accommodating. Every employee I interacted with was pleasant and aimed to please. My husband injured his leg playing pickleball and the staff was beyond accommodating (transported him in the house car for medical care, lent us a wheelchair, provided ice non-stop). Oscar and Bruce in particular were very helpful. Tim in the security office also deserves a special mention after he shipped something back to me that I mistakenly left in the room prior to checkout. Would definitely stay at this property again if we find ourselves in San Diego again!"

"We were there for a wedding weekend, I was completely blown away by the property and service. I work for a luxury hotel and I notice the details.. I can share I really don’t have any negative feedback. The only thing I can think of was a few times of long waits/disorganization at the café. But I’m reaching for any feedback to share. Truly a remarkable property and I hope to return. Hotel did a great job communicating that they were recovering from an event that affected their kitchens and would have limited outlets available the day we arrived."
